We got one of these years ago, and liked it so much we bought two more: The result is not the same as an omelet made the usual way, but it is easy and delicious. This morning I had a salami & Gouda omelet, and made a chicken salad omelet for my wife. PS. the spellchecker here does not like "omelette".

Similar to that my dad bought me a sandwich griller around 8 years ago that I utilize dang near every week. Quick easy grilled cheese or any variety of meats& toppings in a few minutes crispy/toasted delight. I use it often, especially for my trips to Phoenix Fan Fusion. Bunch of grilled sammies in the carry bag to avoid over expensive eating means more $ spent on comic books!

Had Pogash (Polish Pizza) tonight. It is mashed potatoes, cheese and onions baked on a pizza crust. Sort of an inside out perogie.

This past Saturday night, I made the following for dinner.
Starting Friday night at 10:00pm, I put a 2 lb boneless beef roast and a 2 lb boneless pork roast into my large crockpot after covering each with fajita seasoning (store-bought, as I didn't have everything I needed to make my own).
At 9:30am on Saturday, I fire-roasted three poblano peppers under the broiler in my oven. I would normally do this on the grill outside, but it was 15 degrees on Saturday, and even with a covered deck, I didn't want to stand out there for 15-20 minutes to get it done. Once finished, I removed the skins and diced these.
At 10:00am, I removed the meat from the crockpot, shredded it, then put it back in with about 20oz of green enchilada sauce (canned, although I should have used the homemade green tomatillo salsa that I had in the fridge; lesson learned) and the diced poblano peppers.
Around noon, I rendered down some bacon ends, diced about a quarter of a white onion, opened a can of diced jalapenos (my store didn't have any decent-looking fresh ones), and put these into my small crockpot along with two cans of black beans, then let these slow-cook all afternoon.
Made a little Mexican rice, warmed some tortillas, and got out the sour cream, and we had a mid-winter fiesta around 6:00pm on Saturday evening.

HEY GRANDPA! WHAT'S FOR SUPPER?mmmm...... fresh venison stew.... with veggies and pearl barley, of course. Amy (my wife) doesn't care for venison, which means this will last me for several days. Perfect for a work-from-home lunch. I use ground venison for my stew instead of cubed cut-- it improves the savory aspect of the flavor, and it also means that I don't have to cut up good venison steaks. No offense meant to our vegetarian and vegan friends... I respect your absolute right to choose your own diet. But for myself, I'm an omnivore in the food pyramid. (another point-- I do NOT hunt for sport or trophies, and there are no antlers or other taxidermy to be found in my home. If I hunt it, I eat it. period.)

The stew looks good - except for the barley. Can't stand barley in stews and soups.

Threw these on the smoker a couple nights back. Italian sausage, red potatoes, bell pepper and onion.

Normally I'd slice the sausage but the casing on this was a bit tough and the interior was very soft. If I'd had time to freeze them for a bit I could have sliced them, but it wasn't happening this time around. I probably also need to sharpen my knives.

Hmm, I think not slicing them seems like a better way to go anyway. You've got me thinking I should try out this recipe.

The plus to slicing them is that they cook faster and it makes it a bit easier for the timing of everything. The peppers and the onions ended up a bit overcooked while the potatoes and the sausage were just right. In a normal oven or a gas or charcoal grill I'd have put the veggies on a bit later, but my smoker loses a lot of heat if it's opened up very often.

Cold windy wet Saturday and not feeling in the mood for cooking so decided to make up some nibbling for the day. The cheap and easy quick way like mom created during my childhood. Start with Chili Cherse Frito corn chips, sprinkle shredded cheese mix of cheddar, asiago and swiss. Shredded up my left over broiled chicken in a can of green chili sauce. Pour sauce/chicken over top of corn chips, sprinkle LOTS of cheese mix and quick 8 minutes in toaster oven. Nice warm gooey goodness to munch on while the wind and rain plays outside. Instant yum for my tum.
