Are there any periods that haven't been mentioned here?
The question for the OP is "what are you looking for? What do you like?"

The only Superman stories I return to again and again are the original stories by Siegel and Shuster from early Action and Superman, and the Superman Dailies and Sundays from the Golden Age. Other than that, it is one off stuff, like Superman for All Season, and the Superman COnfidential stuff written by Darwyn Cooke. The recent Superman Smashes The Klan by Gene Luen Yang was also amazing. I enjoyed a lot of the Triangle era stuff when it came back, but revisits have only left me disappointed and unsatisfied as a reader. -M Completely forgot about Superman For All Seasons... when he tells the kid "my mom made it for me", I tear up every damn time.

I'm trying to get more into the character so any advice would be greatly appreciated. What have you read so far that you like?

One story that gets some love from the oldsters here is the "Virus X" serial that ran in Action 363-366.

The only Superman run I have any interest in is the original Siegel & Shuster run.

Well, mostly he flies, but I heard about one story where he and the Flash have a foot-race, so that's probably the best Superman run. The worst runs was when he was exposed to prune kryptonite.

Superman Secret Identity by Kurt Busiek and Stuart Immonen. Even though it stars a different version of Superman it is near perfect in capturing all that is good about the characters.

I also liked Geoff John's stories in Action Comics with the Legion. Braniac. Chris Kent. Gary Frank or Adam Kubert were the artists.
