Is there a quick way to reply to just one post and not have it quote the entire conversation? Every forum I've ever been on defaults to just quoting one post. It's messy and (imho) ridiculous for it to always include the entire chain.

Not sure if it is quick and easy, but I have BBCode set as the default (instead of preview) in my viewing when I post/respond and I can easily highlight and delete parts of the quoted chain or response I don't want to repeat. It's not a one step option bit it's not hard to do. -M

There is a new version of the proboards software we utilize here in the works. We'll probably see it implemented here sometime in 2017. I'd like to believe the quoting feature will be simplified with the upgrade. You can always make a suggestion to the development team here just to be sure, though. In the meantime, I agree with mrp that defaulting to BB code helps. I've learned to quote using BB code with a minimum of thought/effort involved, but there's definitely a learning curve.
