What's a good old series of the Punisher to get into?
The 1987 series or the other series War Journal?

The original ongoing by Mike Baron is very good, as is a good chunk of War Journal.
You can avoid War Zone outside of the initial 6 issue story arc, which I would recommend.
The one-shots of the time like Intruder and Return to Big Nothing are very good as well.

There was also the 10 issue Punisher Armory series giving a lot of in-depth detail to a lot of the weapons and tech that Frank would use.

I love the Punisher, but that book, which I apparently incorrectly assumed was a one-off, seemed like just a catalog of cartoon weapons. I thought it was sarcasm, like an "Assistant Editors' Month" gag.

I'm surprised both the 1987 punisher and the War Journal series lasted up to 100+ issues.
Dunno if I even want to binge read that many issues for a comic book character such as the Punisher

I thought it was sarcasm, like an "Assistant Editors' Month" gag. Some of it was detailing over the top stuff that Micro had designed for him, but a lot of it was real world weaponry as well. Not a particularly thrilling read, but interesting nonetheless.

With punisher, the oneshots, OGNs, specials and some minis etc were always the best IMO. The ongoing series were strangely best in their first arcs. As they go they tend to worsen. I'd say check out big nothing, intruder, the cell (especially) and the wolverine punisher tpb (jungle adventure?). Maybe the magazines. If you like em try the first arcs or tpb of the various series. I really liked war journal and war zones. Skip armory unless you're a gun nut.
