They say Eurovision is the Mother of all song competitions. It's the most watched TV (non-sport) event in the world. Alain Barrière represented France in 1963 with his chanson "Elle était si jolie". Ended up in the 5th. place. Hot on it's heels Dragan Stojnić covered the song for the YU market, and almost 20 years later the Punk band Pekinška Patka (Peking Duck) put the last nail in the coffin. "Bila Je Tako Lijepa" (She was so beautiful)

Covering song that originally had lyrics into Instrumentals could be less than adventurous. Often they come off as glorified karaoke tunes with long background passages and nothing else. For me the best cover songs under this criteria would be the ones that replaced the vocals with "other" instruments. Like the EDDA Works tune in this post "From The Soul" re-arranged by Tátrai (Guitar) & Pálvölgyi (Keyboards)

I can't think of anything by Dylan where I prefer his version over a cover*. Favorites:

I like Dylan's version of Tangerine Man more than the Byrds', but that might be partly because I've heard the latter so much over the years it feels a bit played out to me.
