George Harrison's cover of The Chiffon's He's So Finehah! I agree, though. He made much better use of that melody than the original did. Here's an obvious one: my favourite Pretenders track, their cover of the Kinks' Stop Your Sobbing:

When The Rap genre became popular in the early 80's, they made use of many songs as the undermelody. I see that Biggie Smalls use The Police's " Every step you take". It was a fine reinvention of the song instead of someone just singing it again.

Not my favorite, but this is probably universally accepted as being one of the world's greatest covers. I LOVE early Dylan, but even I'll concede his original version of this song kinda' sucked. From what I've heard this song is from the turn of the century and had been recorded in the 1930's as a blues jam. It's my favorite cover for sure. That's a great one and I think their cover of Don't Let Me be Misunderstood is another:

I was thinking about making a similar thread in the old Music Forum before the reboot but never got around to it. There are so many that immediately come to mind some of which have already been mentioned.
I always liked Hi-Standard's cover of The Mamas & the Papas' "California Dreamin'".
Punk rock cover band supergroup Me First and the Gimme Gimmes have released half a dozen albums that solely feature cover songs. One of my favorites in their version of Paul Simon's Me and Julio Down By the Schoolyard".

MEX is a well known Hungarian band, that sings mostly in the language of their ancestors, yet always making sure to include one or two very unexpected cover tunes on each of their releases. That practice was not abandoned on the 1998 album "Pszicho-Pata" either, where the band choose to rock out the Madonna's classic. Like A Virgin

Pras and Ole Dirty Bastard sampled Islands in the Stream for Ghetto Superstar. Puff Daddy (Sean Combs) used Led Zepplin's Kashmir in Come With Me. All songs I like both of and feel neither sample is an affront to the original music. For Come With Me, Jimmy Page played the guitar himself. Edit: Though I don't recall the rappers name, in the early rap scene one sampled Gilbert OSullivan's Alone Again (Naturally) and was sued for unlawful use. There was a documentary at one time on netflix about how that incident got so much coverage that it started laws getting put in place regarding sampling.
