I've even heard accounts of oafs in Wisconsin (I believe that's what residents of that state are called, right? "Oafs"?) who eat cheese that squeaks. I assume those are little cries for help by people who realize how awful it is to be live in Wisconsin. Easy, cowboy. Wisconsin produces some legit cheese (and curds). No whey?!? -M

Growing up in Iowa most people called em yams. Of course I've never heard of yam pie, but sweet potato pie ? Sure.
It's funny cause we were at the in-laws out of town for Thanksgiving on year and went to Safeway. They had yams up front. My mother-in-law had sent us for sweet potatoes. I asked my wife, "Aren't they the same thing ?" We weren't sure.
As far as cornbread, yes, there's a big difference between Northern and Southern cornbread. I learned that marrying into an Okie family.

A woman at the farmers' market just outside downtown makes what she calls cornbread cake. If I weren't trying to scrimp & save for the stupid holidays & related expenses (mainly travel), I'd have picked up a couple of loaves this weekend. Truly excellent. Sort of reminds me of what an FB friend of mine here in town describes as the version of cornbread he grew up with in Maryland, though in his words that's "closer to pie consistency than cake," which sounds ... intriguing.

I've come to love cornbread though I rarely have it.
Mom about once a year would corn muffins with butter and syrup.

If done right, it's not dry. The best cornbread is just a bit moist. It's because I am from Illinois, and no one here knows how to cook it right. I need me a good southerner to make me some good cornbread and ship it to me (Dan). My actual favorite form of cornbread, as is well known among some here, is hot water -- white corn meal mixed with hot water & deep-fried in oval patty form, giving it a golden coating. Apparently impossible to find in restaurants in central Alabama, where unfortunately they don't even known that fried catfish is supposed to be served with pickled green tomatoes & raw onion slices, but fairly common back home in Arkansas. For baked cornbread, I'd say buttermilk is the best. I love good jalapeno cornbread as well. No sugar, of course. Just to be on the safe side, I'd say that all sugar in the household should be moved out of the kitchen, & perhaps to the outdoors, while cornbread is being prepared.

Actually the first time I ever had it was at a Tex-Mex restaurant in Minneapolis and I fell head over heels for it.

Not much good about this morning. First off snowed yesterday and the docs office called to reschedule my appointment to get my arm cast cause my provider couldn't make it. That's before I got in my truck to go to work. Which decided not to work. So limped it into the dealership and here I wait in the lounge for a ride because with a broken arm I can't drive our personal vehicle to work being a manual transmission.
