Favorite 1a: Scorpions covering Temple Of The King (aw geez, more faux barbarians).
Favorite 1b: Gary Moore, Shapes Of Things live. This is what cemented my Moore fan-ism, and subsequently led me to the blues when Moore changed direction.
I know many people would say Elvis peaked earlier, but 1974 was easily peak Elvis for me (but he quickly dropped off from there). His concerts were half cover songs. Just to pick one, here's "Let Me Be There". That bass-voiced backup singer is so cool.

There are a ot of classical versions of various pop or rock songs or even entire albums and though many of them are interesting just to see how they approach the pop melodies not all of them are especially inspired. I think this one is:
Worth a listen even if you hate classical music and/or Led Zeppelin.

I think this one is: Worth a listen even if you hate classical music and/or Led Zeppelin. That was pretty good. Years ago I bought a CD of monks chanting Black Sabbath songs. It was worth one listen, at least. But I make no apologies for rockin' out to the Harp Twins:

That's me on lead vocal and rhythm guitar. Geez, that is scary!* * - because there's a sound effect there that reminds me of a drill my dentist uses.

It's just a harmless little ol' theremin.
